
Recipe: Rhubarb pie
HEALTHY RHUBARB PIE WITHOUT ADDED SUGAR

Rhubarb pie is a great favorite for summer snacks. This recipe gives you a soft, chewy and crispy rhubarb pie that has no added sugar but tastes just as sweet. Serve the pie with vanilla ice cream, guaranteed to be a hit with the whole family.
INGREDIENTS
Pie:
- 150 grams extra salted butter
- 4-5 rhubarb stalks
- 1 handful of frozen raspberries
- 1 dl whipped cream
- 2 dl Use Like sugar
- 2 dl Fiber Syrup
- 7 dl oatmeal
- 1 tsp baking powder
- A pinch of salt & a pinch of vanilla powder
Serving:
METHOD:
Turn on the oven to 175 degrees.
Take out a 20 cm pie dish and place the rhubarb and some raspberries in the bottom, then sprinkle two tablespoons of Use like Sugar on top.
Mix the rest of the ingredients in a saucepan on the stove. Melt the butter, then pour in the cream along with the fiber syrup and Use Like Sugar and mix well. Bring the mixture to a simmer, then add the oats, a pinch of salt and vanilla powder and mix until you get a batter.
Then pour the batter over the rhubarb and raspberries in the pie dish. Bake the pie in the middle of the oven for about 30 minutes. The oatmeal should get a nice golden brown color.
Let the pie cool for about 5 minutes and it is then ready to serve with a scoop of Vanilla Bean.
