ICE CREAM COOKIES WITHOUT ADDED SUGAR

Ice cream cookies with oat flakes are the world's easiest dessert that the whole family will love. A perfect dessert for dinner that is also completely without added sugar and can be enjoyed by everyone! A healthier alternative that is just as delicious and suitable for any day of the week.
INGREDIENTS
- 75 g butter
- 1 dl gluten-free rolled oats
- 1 dl buckwheat flour
- 1 dl Use Like Sugar
- 2 tbsp Fiber Syrup
- 2 tbsp cream or milk
- 3-5 vanilla stevia drops
- 1/2 tsp baking powder
- NICK'S ice cream
- Decoration: nuts of your choice
INSTRUCTIONS:
Set the oven to 175 degrees hot air.
Then melt 75 grams of butter in a saucepan and add 1 dl gluten-free oatmeal, 1 dl buckwheat flour, 1 dl Use Like Sugar, 2 tbsp fiber syrup, 2 tbsp cream or milk, 3-5 vanilla stevia drops and just under 1/2 tsp baking powder. Stir everything together in the saucepan until it becomes a batter.
Then press out circles of the batter on a sheet of baking paper, size you can choose yourself but the right size is about 3 cm in diameter. Bake in the oven for 5 minutes and then let the cookies cool on a wire rack.
Take any flavor of NICK'S ice cream and spread a thick layer on a cookie and place another cookie on top of the ice cream. Tadá, you have an ice cream cookie! Then roll the ice cream cookie in nuts of your choice for some extra crunch.
