Recipe: Elderflower Cordial

ELDFLOWER CORDIAL WITHOUT ADDED SUGAR

Take advantage of the elderflowers blooming in summer to make your own refreshing and sweet elderflower cordial. This recipe uses our sweetener, Use Like Sugar, making it completely sugar-free!

 

INGREDIENTS

 

  • 4 dl Use like sugar
  • 1 liter of water
  • 1 crm ascorbic acid
  • 20 large bunches of elderflowers
  • 1 lemon

 

INSTRUCTIONS

 

In a large pot, bring the water and Use Like Sugar to a boil. Stir while heating to ensure the sweetener fully dissolves. While the water is boiling, clean and rinse the elderflower heads. Shake off excess water and place them in a large bowl or pot. Wash the lemon, slice it, and add it to the elderflowers. Pour the ascorbic acid into the boiled sugar water.

 

Let it cool before pouring over the elderflower and lemon mixture. Cover the mixture and let it steep for two days in a cool place. After two days, strain the elderflower cordial and pour it into bottles.

 

Tip: Freeze the cordial in ice cube bags for longer storage—plus, you get chilled cordial cubes ready to serve!
