Recipe: Blueberry Pie

BLUEBERRY PIE WITHOUT ADDED SUGAR WITH VANILLA ICE CREAM

Blueberry pie is a true autumn favorite that makes for a delightful sweet treat after meals. This recipe is completely without added sugar but tastes just as sweet and delicious. A tip is to serve the blueberry pie alongside a scoop of Vanilla Ice Cream—a fantastic combination!

 

INGREDIENTS

Pie:

  • 2 dl Use like sugar
  • 250 g butter (room temperature)
  • 3 dl rice flour
  • 3 dl almond flour
  • 2 dl oatmeal
  • 1 tsp salt
  • 1 tsp baking powder

Blueberry filling:

  • 500 g frozen or fresh blueberries
  • 2 tsp lime zest
  • 2 tbsp cornstarch
  • 0.5 dl Use like sugar

Preheat the Oven:  Preheat your oven to 175°C.

 

Prepare the Crust: In a mixing bowl, combine Use Like Sugar, rice flour, almond flour, rolled oats, salt, and baking powder with the softened butter. Mix until it forms a soft, dough-like consistency.

 

 Form the Base: Press about two-thirds of the dough into the bottom of a pie dish to form the crust.

 

Make the Filling: In another bowl, mix together the blueberries, lime zest, cornstarch, and Use Like Sugar until well combined. Pour the filling into the pie crust, then crumble the remaining dough over the top.

 

Bake the Pie: Bake in the preheated oven for about 30-40 minutes, or until the crust is lightly golden and the filling is bubbly.

 

Cool and Serve: Remove the pie from the oven and let it cool for about 5 minutes. Serve warm with a scoop of Vanilla Bean ice cream on the side.
