BLUEBERRY PIE WITH VANILLA ICE CREAM

Here is a recipe for a really good and simple blueberry pie. Served with vanilla ice cream!
INGREDIENTS
- 2 dl Use like sugar
- 250 g butter (room temperature)
- 3 dl rice flour
- 3 dl almond flour
- 2 dl oatmeal
- 1 tsp salt
- 1 tsp baking powder
Blueberry filling:
- 500 g frozen or fresh blueberries
- 2 tsp lime zest
- 2 tbsp cornstarch
- 0,5 dl Use like sugar
METHOD:
Preheat the oven to 175 degrees. Mix Use like sugar, rice flour, almond flour, oatmeal, salt and baking powder with room temperature butter. Press 2/3 of the dough into a pie dish. Then mix blueberries with lime zest, cornstarch and Use like sugar.
Pour the blueberries into the pie dish. Then crumble the remaining pie dough over the blueberries.
Bake in the oven for about 30-40 minutes. Serve the pie with soft and delicious vanilla ice cream! Yummy!
