SUGAR-FREE BANANA CAKE

Take the opportunity to bake banana cake when you have bananas left over in the fruit bowl that are starting to get a little overripe. This healthy banana cake is juicy, sweet and tasty with ginger, cinnamon and nuts without any added sugar. Healthy, vitamin-rich and incredibly tasty!

INGREDIENTS

  • 2 dl Use like sugar
  • 2 eggs
  • 200 g butter
  • 3 dl gluten-free flour mix
  • 1 dl almond flour
  • 1 dl gluten-free oatmeal
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground turmeric
  • 1 tsp salt
  • 2 tsp bicarbonate of soda
  • 1/2 dl coarsely chopped hazelnuts
  • 1/2 dl coarsely chopped almonds
  • 3 ripe bananas + 1 for garnish
  • 1 dl yogurt (natural)
  • 2 tbsp Fiber syrup
  • 3 tbsp chopped nuts for garnish

Healthy banana cake with no added sugar.

METHOD:

In a bowl, whisk together the Use Like Sugar and egg until smooth, then add the butter and yogurt.

In another bowl, mix all the dry ingredients before adding the batter. Mix together until smooth. Mash the bananas and mix them in, chop the nuts and add them to the batter.

Place baking paper in a mold and pour in the batter. Sprinkle with chopped nuts and pour syrup over the cake. Don't forget to garnish with a banana on top! Bake the cake at 185°C for 35-45 minutes or until nicely colored and firm.

Let cool completely before serving!
