SOFT GINGERBREAD

A soft gingerbread with amazing aromas of ginger, cinnamon and cloves. A delicious recipe that is perfect to serve around Christmas.
INGREDIENTS
- 3 eggs
- 1 1/2 dl Use like sugar
- 2 dl Greek yogurt or quark
- 3 tbsp Fiber honey
- 6 dl oat flour
- 1 1/4 tsp bicarbonate of soda
- 1 tsp baking powder
- 1 tbsp cinnamon
- 1 tbsp ginger
- 1/2 tbsp cardamom
- 1 1/2 tsp cloves
- 1 dl frozen lingonberries
METHOD:
Start by setting the oven to 175 degrees, hot air. Then grease a sugar cookie sheet. Mix together the oat flour, bicarbonate of soda, baking powder, cinnamon, ginger, cardamom and cloves in a bowl. In a separate bowl, whisk the eggs and Use Like Sugar into a porous batter. Add the Greek yogurt or quark and Fiber Honey and whisk until smooth. Then add the flour mixture a little at a time, whisking continuously. Finally, stir in the frozen lingonberries. Pour the batter into the greased pan and bake in the middle of the oven for 40-45 minutes. Tip. Use a wooden stick to see if the cake is ready.Allow to cool before removing the cake from the mold.
