As the base in our sweetening mix always includes Stevia (or Steviol glycosides as the Swedish Food Agency wants us to call it) which are dosed on a much smaller scale than sugar, we need to fill in with some ingredient that is both kind to the block sugar and the stomach. That's where fiber comes in. "Soluble Gluco Fiber" and Polydextrose are two fibers we use. Although these are made from corn starch, they basically do not affect blood sugar. Polydextrose has a GI value of 1 (sugar has 70, white bread 100). It is therefore negligible. Gluco fiber has similar values.
All products are tested by Nick and it has been shown that these fibers provide both extremely low blood sugar results and are well tolerated by the stomach. So all in all, it's a win-win!
Unfortunately, not all fibers are created equal. If you see IMO fiber or Isomalto-oligosaccharides on a label, that fiber causes a big blood sugar spike. Even though it is declared as "sugar-free".
