
Recipe: Passion Fruit Cheesecake
PASSION FRUIT CHEESECAKE WITH NO ADDED SUGAR

Isn't it luxurious to treat your guests to an after-dinner cheesecake with tart notes and the exotic flavor of passion fruit? Why not make it even better and offer a cheesecake that is also completely without added sugar! Below is a recipe for a really delicious cheesecake with a passion fruit flavored topping that is both healthy and incredibly tasty.
INGREDIENTS
Cheesecake:
- 4 eggs
- 3 dl cream
- 2 dl Use Like Sugar
- 5-6 drops of vanilla stevia drops
- Philadelphia, 200 grams
- 1 package digestive biscuits
- 2 dl water
- 3 tablespoons Use Like Sugar
- 1/2 lime and
- 2 teaspoons gelatin powder
- 4 passion fruit
METHOD:
Cheesecake:
Whip 3 dl cream hard. Take 4 eggs, separate the white and the yolk and put the yolks in one bowl and the white in another. Mix the yolk with 2 dl Use like Sugar and stevia drops. Stir with an electric whisk and then add 200 grams of Philadelphia and then stir gently so that the cream cheese mixes out nicely. Then add the cream and stir again. Next, whisk the egg white to a stiff foam and then stir everything together into a batter. Take a packet of digestive biscuits and blend in a mixer, place this in the bottom of a springform pan and pour the batter over. Place in the freezer until set, this usually takes about 6 hours.
Garnish:
Boil 2 dl water with 3 tablespoons Use Like sugar. Then squeeze in half a lime and 2 teaspoons of gelatine powder. Finally, scoop out four pieces of passion fruit and add this to the mixture. Leave the topping to cool and then place in the fridge while the cheesecake is in the freezer. Next, drape the topping over the cake and place it back in the freezer to set.
Decorate as desired when serving, we recommend lime slices. Nice and tasty!
